The Must Have Pineapple Tart for Chinese New Year
As Chinese New Year approaches, one essential MUST HAVE pastry is pineapple tart.
Pineapple is known as Ong Lai in Hokkien, symbolizing prosperity.
Although making this paste can be tedious, the flavors and traditions make it worthwhile.
We slow cooked our hand grated pineapple over low heat until caramelized, enhancing its depth of flavor.
We also have another version where we infused the pineapple paste with alcohol into the paste to enhance the taste to the next level.
For the pastry, we uses good quality butter to ensure a flaky, aromatic treat that pairs perfectly with the pineapple filling.
