Each pyramid is a self-contained feast, born from hours of meticulous prep and a deep respect for heritage. When you untie the twine, you aren't just eating a rice dumpling, you’re enjoying the result of a grueling, multi-step ritual.

It starts with the glutinous rice, seasoned and stir-fried until fragrant, then layered with earthy black-eyed peas and a smooth layer of mung beans for that essential buttery contrast.

Hidden inside is a treasure trove of flavors that have been marinated and prepped by hand:

• Pork Belly: Succulent chunks that melt into the rice during boiling

• Shitake Mushrooms & Chestnuts: Providing a deep, umami earthiness and a satisfying crunch.

• Salted Egg Yolk: The golden "sun" at the center that adds a rich, savory saltiness.

From the back-breaking work of scrubbing every bamboo leaf to the precision required to tuck and tie the twine, this is slow food in its purest form.
